Union Square Cafe: S'mores Pavlova

Quick backstory: This semester, I'm interning for Union Square Hospitality Group, owners of restaurants like Maialino, Untitled, and of course, Shake Shack. I'm a digital marketing intern, which basically means I create content that can be used online to promote the restaurants. I specifically work with Union Square Cafe and the adjoining bakery, Daily Provisions.

This internship more or less fell in my lap: I met the associate director of digital marketing at USHG's new pizzeria, Martina, and asked her for an internship. Straight up.

The original Union Square Cafe had been one of my parents' favorite restaurants, and I'll never forget how upset my father was when they closed their doors in 2015, after not having a meal there just one more time. Luckily for him, they opened again, three blocks north, a year later. Even luckier for him, his daughter now interns there. You're welcome, Daddy.

So expect a few posts inspired by my current position as photographer and glorified taste tester at both Union Square Cafe and Daily Provisions. Like this one, about the new s'mores pavlova, from the amazing Chef Daniel Alvarez.


It's a perfect flavor combination: smokey and sweet, with just a hint of saltiness. The char on the meringue shell is basically an umami bomb, especially when you crack into it and break it all open.

Toasted marshmallow ganache is piped in a huge dollop in the center of the plate, creating the perfect pillowy cushion for graham cracker ice cream. Yup, they created it. It exists. Both are then topped with a piping hot, oozing chocolatey molten lava cake.

But that's not all.

The ganache, ice cream, and cake is then doused with more chocolate sauce, and then a much-needed sprinkling of flakey sea salt. Woah.

It's then topped with a freshly-torched meringue shell, that just so happens to have even more ganache piped on the inside.

I'm not going to say anything more. In fact, I should've said less. I'm not doing this dish the justice that it deserves. Go there. Eat this. Lick the plate. I would've, but I was with actual USHG employees and Chef Daniel, as well as the whole entire staff of both Union Square Cafe and Daily Provisions, and didn't want to completely embarrass myself. But don't worry, I'll be back, parents in tow, and embarrass them on the restaurant floor.
